Sachet d'Escpices
Sachet d'Espices is a basic grouping of herbs that are used to season all kinds of stuff. It mostly comes into play when you are making stocks. But, you'd be surprised all the places this mix of herbs will show up.
The herbs go into a little square of cheese cloth. Although, you could use almost anything that will hold the herbs together while they are being boiled, a tea ball comes to mind.
Procedure
For one Sachets d'Espices
- 2 bay leaves
- 1 tablespoon thyme
- 2 teaspoons black peppercorns (whole)
- 1/4 cup parsley
You can make some adjustments to this Sachets d'Espices for example I am not a big fan of dried thyme so I usually substitute dried oregano. But there is no reason you can't substitute your favorite herb, like a clove of garlic.
