Pasta Dough

Pasta and Stuffing

  • 1 1/2 cups bread flour
  • 1 cups semolina flour
  • 4 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 tablespoon warm water
  • Makes 4 cups or serves 4

    Mix the flours and salt together in a large bowl. Mix the eggs, olive oil, and water seperately. Form a well in the flour and pour all the liquid ingredients into the well. Mix by hand. Drag the outer edges of the flour mound into the well in the middle. Countinue mixing in this fashion until all the ingredients are incorporated. Knead the dough by hand in the bowl until it becomes smooth and elastic. Cover the bowl with a damp cloth and allow the dough to rest for at least 30 minutes before rolling it out.
