Have you ever thought to yourself, "I wonder how to make headcheese?" Or "How do you prepare testicles before you eat them?" If so you are in the right spot. The skills section is here to share useful or interesting techniques with other chefs. Most good cookbooks include all the basic cooking skills so why would I want to copy? I don't. I want to be the place on the web for obscure and tricky techniques. So if you wake up on a Sunday morning and think to yourself, "I'd like to link my own sausage. I wonder how I would do that." All you have to do is come here to find out.
