John Dory Wrapped in Parchment
John Dory is a wonderfully light and flavorful fish. It seems to team up best with light citrus flavors and mild herbs. In this recipe leeks and lemon pair up to create a lightly seasoned entre tht is perfect for a lunch party.
Ingredients

- 4 John Dory fillets
- 1 large yellow onion very thinly sliced
- 2 garlic cloves thinly sliced
- 2 large leeks white part only cut into very thin lengthwise strips
- 8 very thin slices of lemon (round slices of the entire lemon)
- juice of half a lemon
- 4 tablespoons butter
- 12 whole pepper corns
- 1 teaspoon salt
- 4 sheets of parchment paper
Procedure
preheat oven to 400
Lay out the sheets of parchment and place one John Dory fillet on each. Sprinkle salt on each fillet and place a pad of butter on each. Sprinkle equal quantities of leek, onion and garlic over each fillet then add two lemon slices. Lastly sprinkle a few drops of lemon juice and place three peppercorns on each fillet.
Fold two sides of parchment paper together and fold the edge over itself until a tight seal is formed. Fold the remaining two edges under the fillets (leave enough room to tent the paper slightly) and place them on a baking sheet. Put the fillets in a preheated oven for 20 minutes.
Remove the cooked fillets from the oven and plate immediately. Serve while still hot and steaming.
