Albacore Steaks with Green Tea Wasabi Sauce
The sauce is inspired by many nights out in sushi bars all over San Francisco. Hot green tea, soy sauce and wasabi, and a little ginger are always on the table at a sushi restaurant. These flavors just naturally collide to make a fantastic sauce.
Ingredients

- 4 medium large albacore steaks
- 2 tablespoons olive oil
- 2 tablespoons fresh cracked black pepper
- 2 tablespoons Kosher salt
- 1 tablespoon green Wasabi paste
- 1/4 cup strong Green tea broth
- 1 teaspoon grated ginger
- 1 teaspoon light soy sauce
Procedure
Coat the exterior of the albacore steaks with olive oil, salt and pepper. Broil them on a hot grill approximately 2 minutes per side.
Combine the green tea, ginger and soy sauce in a small pot and heat to a lite simmer. allow to simmer for 10 minutes or so to combine all the flavors. Just before serving add the wasbi and pour the entire contents into a serving bowl. Spoon the sauce over the fish.
