Plum Johnny Cake
I first had Johnny Cake in Panama. I really liked it because of its simplicity. By adding fruit I think it becomes a great simple dessert. It pairs really nicely with ice cream and whipped cream.

For 4 people:
- 2 ˝ cups white cornmeal
- 1 cup all-purpose flour
- 2 teaspoons of salt
- 2 teaspoons of baking powder
- ˝ teaspoon of baking soda
- 1 cup of buttermilk
- 1 cup milk
- 2 large eggs beaten
- 3 tablespoons of melted butter
- 6 ripe plums halved and pitted
- 2 tablespoons butter
Procedure
Preheat oven to 400
In the large bowl, combine the white cornmeal with the all-purpose flour, salt, baking powder, and baking soda. Use a wooden spoon to mix the ingredients.
In a separate bowl, combine 1 the buttermilk, milk, and eggs. Blend in the melted butter to the bowl.
Pour the egg and buttermilk mixture into the dry ingredients, stirring with a wooden spoon just until ingredients are well moistened.
Place a 10 inch cast iron skillet on the stove over medium high heat. Melt the butter and add the plums flesh side down. Arrange the plums evenly and then add the batter to the pan. Put the pan into the oven and bake for 30 minutes, or until nicely browned.
To serve turn the frying pan upside down onto a serving platter.
