Roasted Pears with Ameretto Sauce
Bartlett pears are typically quite firm and usually not a favorite pear to be eaten raw. But the Bartlett takes on a whole new dimension when it is cooked. Cooking softens the flesh and brings out wonderfully nutty flavors. By pairing amaretto liquer and ameretto cookies that nutty roasted flavor is complimented creating a wonderful dessert.
Ingredients
- 2 firm, green Bartlett pears
- 2 tablespoons unsweetened butter
- 1 cup Ameretto Liquer
- 2 cups crushed Ameretti cookies
Procedure
Preheat oven to 450
Cut the pears in half and remove the seeds with a mellon baller. With a sharp knife cut out the stem. Put the butter in the bottom of a small roasting pan. Make sure the pears fit tightly. If there is too much room between the pears they will dry out while roasting. If you don't have a small roasting pan add additional butter and liquer and check frequently during the roasting process to make sure the pan does not get dry. If it starts to dry out just add more liquer.
Place the pears on the top rack of your oven and rost for 25 minutes or until soft. You can check doness by poking the pears with a fork. If the fork pushes in and out with just a little resistance the pears are done. When the pears are done remove them from the pan and place on your serving plates. Pour the sauce left behind in the roasting pan evenly over all the pear halves.
Sprinkle the crushed Amaretti cookies over the pears. The cookies will stick to the sauce on the pears but be generous with the cookies and sprinkle them around the plate.
