Lavender Creme Fraise Ice Cream

The first time I had ice cream made from creme fraise was in the south of France. It was an absolute revelation. The ice cream is smooth like gelato but, retains a tangy taste that is wonderfully complimenterary at the end of any meal.

Procedure

Infuse 3 tablespoons of lavender flowers in 1/2 cup hot water. Allow the lavender flowers to soak for 20 minutes. Strain the lavender from the water and reserve the water in the fridge. You can chuck out the lavender.

In an ice cream maker add the creme fraise and honey along with 3 tablespoons of the lavender water. Add the remaining fresh lavender flowers and let the ice cream maker run as normal. The Ice cream will be ready quickly; in about 10 minutes.

If you don't have an ice cream maker you can still do this recipe. Place the ice cream mixture in a large bowl or high sided baking pan. Place the mixture in your freezer for about 10 minutes. After the ten minutes passes use a fork to whip the ice cream for about 1 minute. Return it to the freezer. Repeat this process until a smooth ice cream is formed.

Note

Becareful not to add too much fresh lavender flowers. They can be pretty bitter. The act of infusing the lavender removes the bitter taste. Add just enough fresh lavender to look pretty but not so much that it will make your ice cream bitter.
