Stuffed Sardines with Corn Meal Crust

- 30 small sardines trimmed, gutted, cleaned
- 2 eggs beaten
- ¼ cup milk
- 30 thick slices of Gruyere cheese
- 2 cups corn meal
- 1 cup flour
- ½ cup olive oil
- salt and pepper
- 2 tablespoons minced parsley
Procedure
In a large bowl add the eggs and milk mixed together. In a separate large bowl mix the corn meal and flour. Stuff each sardine with a slice of cheese. Dip the stuffed sardines in the egg mix and roll them in the corn meal mix.
In a large heavy frying pan like a cast iron skillet heat the olive oil over a medium flame. Fry the sardines on each side for about 5 minutes. Remove to a rack cover in paper towels to drain excess fat.
Place the drained sardines in a serving dish. Add some additional salt and pepper and sprinkle with the parsley.
