Onion Chutney
Ingredients

- 4 large valdallia onions chopped small (about the size of your thumbnail)
- 2 tablespoons butter
- 3 cups brown sugar
- 1 cup white wine vinegar
- 1 cup vermouth
- 1/2 cup currants
- 3 cloves garlic whole
- 1/4 cup candied ginger
Procedure
Place all ingredients in to a large saucepan. Bring to a boil and reduce the heat to a simmer. Allow to cook for about 1 hour or until the onions are very soft.
