Leek Beingnets

- 3 pounds leeks tender white ends only sliced into 1/2 inch thick rounds
- 2 egg yolks beaten
- 1 cup flour
- 1 cup water
- 2 tablespoons olive oil
- 1 teaspoon course Kosher salt
- 1 teaspoon fresh cracked pepper
- 4 cups all purpose flour
- 1 heavy cast iron frying pan
Sauce
- 1 cup fresh cilantro
- 1/4 cup fresh mint
- 1 tablespoon rice wine vinegar
- 1/4 cup olive oil
- 1 teaspoon salt
Procedure
Put the flour in a large bowl. Add the eggs, olive oil and a pinch of salt. Mix the eggs and flour while slowly adding the water. Continue adding water to the mixture until a thick batter, like pancake batter, is achieved. Let this rest on a counter top covered for about an hour.
In a large pot heat the peanut oil to 350 degrees. Batter the leek slices and drop them one at a time into the hot oil. Allow them to cook for a few seconds rolling the leek while it cooks. When the leek becomes golden brown on all sides remove from the hot oil and set them on dry paper towels to drain.
For the sauce combine all ingredients in Cuisinart or other blender. Blend until smooth (add a small amount of water if need to make the blending easier).
Notes
I also like the sauce with spice you can add a small green (Thai style) chili to the blender.
