Green Mango Relish

- 2 large green mangos cubed small (1/4 inch square)
- 1/4 cup chopped cilantro v
- 1 green jalapeno diced small
- 1/2 large jicama cubed small (1/4 inch square)
- 1 teaspoon salt
- 2 tablespoons olive oil
Procedure
Cube the jicama and mango so that they are similar sizes. Remove the veins and seeds from the jalepeno to make it less hot. You can substitue a green apple for the jicama.
Mix all of the ingredients in a medium bowl. Cover with kitchen plastic and set in the fridge for a couple of hours to marinade (return to room temerature before serving). You can also do a quick marinade by leaving the relish at room temerature for 30 minutes before serving.
