Sauted Spinach with Mint

For 4 people
- 2 lbs leeks (tender white part only)(cleaned and chopped)
- 2 cups spinach coursely chopped
- 1 yellow onion diced
- 1/4 cup olive oil
- 1 tablespoon fresh chopped mint
- 1 teaspoon nutmeg
- salt and pepper
Procedure
In a large frying pan add the olive oil and onion. Saute until the onion is tender.Add the leeks and cook for a further 5 minutes. Add the spinach and saute for a further 5 minutes
Remove the mixture from heat and add the mint and nutmeg. Mix throughly and serve.
