Cucumber Salad with Pomegranate

For 4 people
- 4 British (burpless) cucumbers
- 1 whole pomegranate
- 2 tablespoons sweet rice wine vinegar
- 4 tablespoons olive oil
- salt
Procedure
Peel the cucumbers (leaving a bit of skin if you prefer). Slice the cucumbers in half and scoop out the seeds with a small spoon. Slice very thin. And place them in a big bowl.
Cut the pomegranate in half and peel the outer skin away. Workings in sections gently pull the pomegranate fruit away from its pith using your fingers. Add the fruits to the cucumber bowl.
In a separate small bowl mix the oil and vinegar with a little salt. Adjust seasoning to taste and pour over the cucumbers. Mix thoroughly and serve.
