Hot as hell fire pickling spice
This pickling spice is my favorite. I love hot pickles and this one delivers on the goods!
- 4 tablespoons chili flakes (dried scotch bonnets whizzed up in a cuisinart work best)
- 2 tablespoons cummin seeds
- 1 tablespoon corriander seeds
- 2 teaspoons black peppercorns
- 2 teaspoons white peppercorns
- 1 teaspoon whole cloves
- 1 teaspoon juniper berries
- 2 tablespoons granulated dried garlic
- 4 dried bay leaves
Mix all the ingredients together. Break up any large pieces just by clumbling with your hand. Store the mixture in a ziplock bag or tupperware. It will keep for months as long as no light or air gets to it.
